Midweek Meal Makeover 2/52 Salmon with Tandoori

Week two and new meal number two, well OK not an entirely new meal but a new way of cooking.

My husband bought me this salmon cookbook at some point last year but I hadn't actually used it before so I thought it would be a good chance to give it a whirl.  Although he now says that he's not a massive fan of salmon!

I choose Salmon with tandoori spices and served it with a red and white quinoa and bulgar wheat mix and some cucumber raita.





Again I won't be winning awards for presentation or photography skills!  But it was a really simple dish, healthy and tasty.  Even my "not a fan of salmon" husband liked it!  We'll be having it again as we need to use up our jar of tandoori spice!  He did say it was a little spicy so I think the raita is a perfect accompaniment - I make mine with natural yogurt, paprika and cumin.
